Pumpkin Oatmeal Power Protein Muffins

Ingredients:

  • 7.5 oz of pumpkin puree
  • 0.5 cup of unsweetened natural applesauce
  • 2 egg whites
  • 3 Scoops of MHP IsoFast (flavor is to your preference – I used chocolate which tastes better. I can’t guarantee the final taste of your muffins if you use a different protein powder)
  • 0.50 cup whole oatmeal
  • 0.25 cup of whole oats (to sprinkle on top)
  • 1.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 0.5 teaspoon cinnamon
  • 2 tablespoon flax seed
  • 0.5 cup of Stevia in the raw

Directions:

1.) Pre-Heat oven to 350

2.) Spray muffin tins with non-stick cooking spray

3) Mix all wet ingredients together till fully blended into bowel

4.) Slowly add in each dry ingredient, one at a time into wet mixture

5.) Place 1/4 Cup batter into muffin tins and sprinkle oats onto of batter

6.) Bake in oven for 15-20 minutes, or till golden brown
